Abstract

Millets are highly nutritious grains gaining global recognition due to their health benefits, sustainability, and adaptability to diverse climatic conditions. With the increasing demand for plant-based milk alternatives, millet milk has emerged as a promising dairy substitute rich in fiber, protein, and essential micronutrients. However, existing millet milk extraction processes are largely manual, time-consuming, and inefficient, particularly for small-scale food processing units. This research presents the fabrication and performance evaluation of an automated millet milk extractor utilizing a lead screw actuation mechanism. The proposed system converts rotary motion into controlled linear compression force to extract milk efficiently from soaked and ground millet slurry. The machine is designed to be cost-effective, compact, and suitable for small and medium-scale food industries. Performance analysis indicates improved extraction efficiency, reduced processing time, and consistent output quality compared to traditional manual methods. The developed system demonstrates the feasibility of mechanized millet milk production and supports sustainable food processing innovations.
